Remember how I was bragging about my bread pudding? “It’s so good I don’t even want dinner!” Well, right after I got off the computer, I headed straight to the kitchen to make Cuban sandwiches. Because, as it turns out, I was really hungry.
Luckily for me, I had lechon. And ham and Swiss cheese and a really big pickle.
Lechon is basically Cuban-style roast pork. It’s loaded with garlic and really greasy. I made mine yesterday in the Crock Pot. It was pretty good, but it couldn’t compare to the pork plate at Versailles. Go figure.
But in this sandwich it was a-amazing! Salty and just a little sweet. Crisp and really gooey.
Cuban Sandwich: Spread a halved bolillo or soft Italian roll with mayo and yellow mustard. Top with sliced pickles, shredded lechon, sliced ham, and sliced Swiss cheese. Grill on a panini press until the sandwich is warm and the cheese is melted.
